Using Your Flameware
-
Casseroles: soups, stews, steamed vegetables…
Fry Pans: omelets, burgers, stir fry…
Sauce Warmers: melting butter, heating water, making tea/coffee…
-
Have a small amount of liquid —water or oil— covering the whole bottom of your pot before you add your food and heat
The clay keeps cooking for a while after you turn off the heat, so turn off the heat just before your dish is complete
-
If you burn food onto the bottom of your Flameware add water to the pot while it’s still hot and let it sit for an hour or so.
If the food is just stuck it’ll usually just lift off the pot.
If the food is highly carbonized it’ll take some scrubbing. I usually start with a fork to scrape the bulk of the carbon off the pot and then finish with a scrubby or the back of a sponge.
